Unsalted butter is the best thing for this mincemeat shortbread recipe. Mixing the butter with the flour is what brings the dough together. Don’t forget to get your butter out of the fridge nice and early so its soft.

FAQs

What are common mistakes when making shortbread? ›

The most common mistakes when making shortbread are over-working the dough, and incorporating too much flour. The less you work the dough, the more crumbly and melt-in-your-mouth your shortbread cookies will be.

What is the secret to shortbread? ›

For great shortbread, regardless of your chosen recipe:
  • Sift the flour before mixing to help remove lumps.
  • Avoid over-mixing the dough.
  • Score the surface for even baking without bubbles or cracks.
  • Chill the shaped dough thoroughly before baking.
  • Cut the shortbread while it is still warm, for smooth, even slices.

When making shortbread What must you not do? ›

Avoid making your shortbread too thick

This is much thicker than a roll-and-slice sugar cookie — or really any other popular type of cookie. If you keep your dough any thicker, you risk the dough coming out of the oven raw. If it's any thinner, the cookie will have a crispy texture with the snap of a graham cracker.

Why is Scottish shortbread so good? ›

Shortbread is called short because of the traditional ratio of one part sugar to two parts butter that lends a high fat content to the dough. This yields a soft, buttery crumb that melts in your mouth, similar to short crust pastry. This ratio is also what makes shortbread so crave-worthy.

What happens if you don't poke holes in shortbread? ›

Piercing the shortbread with a fork is not only for decoration, but it's meant for more even baking. Poking holes in the shortbread allows the heat to penetrate the cookie, hence more even baking. Notice I'm using powdered sugar here. You'll see lots of shortbread recipes using granulated sugar.

What is the difference between Scottish shortbread and regular shortbread? ›

Traditional Scottish shortbread is a simple recipe made with sugar, butter, flour, and salt. Other shortbread styles will include leavening agents like baking powder and baking soda, which makes them crisp instead of crumbly like traditional Scottish shortbread.

Is powdered sugar or granulated sugar better for shortbread? ›

The recipes that used powdered sugar tended to have a softer, more tender bite than those made with granulated sugar. (This is because powdered sugar generally contains cornstarch, a thickener which helps contribute to a thicker/softer texture.)

Why do they often poke holes in shortbread? ›

The word "bread" comes from "biscuit bread" which was made from leftover bread dough that was sweetened and dried out in the oven to make biscuits. Why do you poke holes in shortbread? The holes allow the moisture to escape during baking and more even heat distribution. This helps dry out and crisp up the cookies.

What happens if you don't chill shortbread? ›

Chilling the dough before baking will help the shortbread keep their shape while cooking. In the oven, the dough will spread as the butter in the mixture melts, but baking it from chilled helps reduce this effect. It's most important to do this if you are baking the shortbread in individual biscuits.

What is the new name for shortbread? ›

Shortbread is now Trefoils®!

What is the world's famous shortbread? ›

Walker's Shortbread is honoured to carry a Royal Warrant, granted by Her Majesty the Queen, for the supply of Shortbread and Oatcakes. Walker's Shortbread is a gift fit for a king, and a treat befitting any special occasion.

Why is Walker's shortbread so good? ›

It is only by baking in small batches that we can ensure that classic taste for which Walker's are famed. As it always has been, our shortbread is made using only four ingredients: flour, pure creamery butter, sugar and salt.

What can go wrong when making shortbread? ›

The key with shortbread is not to overhandle it. Make the dough exactly as instructed, but don't mess around making shapes or over rolling the dough - you will end up with delicious but tough biscuits. Stretching and pulling the dough activates the gluten in the flour, making chewy cookies and not crisp ones.

What happens if you add too much butter to shortbread? ›

The excess butter can cause the cookies to spread too thin , resulting in a flat and greasy cookie . It can also make the cookies overly rich and heavy , making them difficult to eat . In addition , too much butter can cause the cookies to burn easily , resulting in a bitter taste .

What happens if you don't chill shortbread before baking? ›

Chill Before Baking

The goal is to ensure the butter in the dough is cold when it goes into the oven. This will prevent the shortbread from spreading.

What happens if you over mix shortbread? ›

It's important to avoid over-mixing shortbread dough, which will develop gluten and make the finished product tough, not tender. To make sure that the flour mixes completely with little effort, sift the flour first to get out all of the lumps.
